Set your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat and set it aside.
Beat the softened butter and sugar together until light and fluffy. Add the eggs and vanilla, then mix for about 2 minutes until smooth and airy.
Swap to a paddle attachment (or mix by hand) and stir in the flour, baking soda, and salt just until combined.
Take the bowl off the mixer and gently stir in the crushed malted milk eggs. Don’t overmix—stop once they’re evenly distributed.
Use a small cookie scoop to portion the dough onto your baking sheet. Leave plenty of room—these cookies spread. About 8 cookies per pan is ideal.
Bake for 10 minutes, until the edges are set but the centers still look soft. Let them rest on the pan for 2–3 minutes, then move to a cooling rack.
