Step 1: Prep & Season
Pat the chicken dry, then coat it evenly with garlic powder, onion powder, smoked paprika, salt, and pepper.
Step 2: Sear for Flavor
Heat a large skillet or deep pan over medium heat and drizzle in a little oil. Add the chicken and cook for about 3–4 minutes on each side until golden brown. Remove and set aside (it’ll finish cooking later).
Step 3: Toast the Rice
In the same pan (hello, extra flavor), add the uncooked rice. Stir it around for 1–2 minutes until lightly toasted. This step adds a subtle nutty taste—worth it.
Step 4: Build the Sauce
Pour in the chicken broth, then stir in BBQ sauce and honey until combined. Bring everything to a gentle simmer.
Step 5: Combine & Cook
Place the chicken back into the pan, nestling it into the rice mixture. Cover, reduce heat to low, and let it cook for 15 minutes.
Step 6: Add Veggies
Scatter the mixed vegetables over the top, cover again, and cook for another 5 minutes. The rice should be tender and the chicken fully cooked (internal temp: 74°C / 165°F).
Step 7: Rest & Finish
Turn off the heat and let everything sit for 5 minutes. Fluff the rice gently, sprinkle with fresh herbs, and get ready to serve.
