Method
1. Prepare the Oven
Set your oven to 400°F (200°C) so it fully heats while you prepare the ingredients.
2. Arrange the Vegetables
Add the tomatoes, diced bell pepper, onion, and garlic to an oven-safe baking dish. If you prefer individual servings, divide the vegetables evenly among four ramekins.
3. Add the Feta
Place the feta block in the center of the vegetables (or split it evenly between ramekins).
4. Drizzle with Olive Oil
Pour olive oil over the vegetables and cheese so everything gets a light coating.
5. Mix the Seasonings
In a small bowl combine oregano, sea salt, thyme, black pepper, and red pepper flakes. Stir well so the spices blend evenly.
6. Season the Dish
Sprinkle the seasoning mixture across the vegetables and feta.
7. First Bake
Place ramekins on a baking sheet or put the baking dish directly in the oven. Roast for about 25 minutes, until the vegetables soften and the feta begins to melt.
8. Stir Everything Together
Carefully remove the dish from the oven and mix the roasted vegetables and feta until creamy and combined.
9. Add Spinach
Fold in the chopped spinach and stir gently until it begins to wilt from the heat.
10. Add the Eggs
Create small wells in the mixture—one for each egg. Crack the eggs directly into the wells.
11. Second Bake
Return the dish to the oven and bake 8–10 minutes, depending on how runny you like your yolks.
12. Garnish and Serve
Sprinkle fresh basil or chives on top and serve immediately with toasted bread, baguette slices, or warm pita.
