1. Prep the Oven
Set your oven to 375°F (190°C). Lightly coat a baking dish with olive oil or cooking spray so nothing sticks.
2. Cook the Spinach and Garlic
Warm olive oil in a skillet over medium heat. Add finely chopped garlic and cook just until fragrant. Stir in the spinach and sauté briefly until wilted but still vibrant.
3. Create the Creamy Sauce
Take the pan off the heat and mix in the Boursin cheese. Stir until the cheese melts into a smooth, herb-speckled sauce.
4. Assemble the Dish
Arrange the chicken breasts in the prepared baking dish. Spoon the creamy spinach mixture evenly over the top, making sure each piece is fully coated.
5. Add the Crunch
Sprinkle panko breadcrumbs and a generous layer of Parmesan over the chicken.
6. Bake
Place the dish uncovered in the oven and bake for 25–30 minutes, or until the chicken reaches 165°F (74°C) internally and the top turns beautifully golden.
7. Rest and Serve
Allow the chicken to rest for about 5 minutes before serving. Finish with fresh herbs if desired.
