Method
Step 1: Season Like a Pro
Combine garlic powder, onion powder, smoked paprika, salt, and pepper in a small bowl. Coat each chicken breast thoroughly on both sides.
Step 2: Cook the Rice
Bring chicken stock and salt to a boil in a saucepan. Stir in rice, cover, and lower the heat. Let it gently cook for about 18–20 minutes until tender. Set aside once done. Quick check: No liquid left? You’re good to go.
Step 3: Sear the Chicken
Heat olive oil in a large pan over medium-high heat. Add chicken and cook for 6–7 minutes per side until golden and fully cooked. Transfer to a plate and keep aside.
Step 4: Build That Creamy Sauce
Using the same pan (hello, flavor!), melt butter over medium heat. Stir in flour and cook briefly until lightly golden. Slowly pour in milk and chicken stock while whisking constantly. Let it thicken for a few minutes.
Important: Keep whisking to avoid lumps—no one wants a clumpy sauce.
Step 5: Add Cheese & Flavor
Mix in garlic powder, thyme, cheddar, and Parmesan. Stir until melted and silky smooth. The sauce should look rich and irresistible.
Step 6: Bring It All Together
Return the chicken to the skillet. Spoon sauce over each piece and let everything simmer for 3–4 minutes. This locks in flavor big time.
Step 7: Serve It Up
Spoon rice onto plates, top with saucy chicken, and sprinkle fresh parsley. Serve immediately and enjoy every bite.
