Step 1: Boil the Pasta
Bring a large pot of water to a rolling boil. Season generously with salt (about 1 teaspoon). Add the rotini and cook until al dente according to package directions.
Step 2: Cool the Pasta
Drain the pasta thoroughly and rinse under cold water to stop the cooking process. Shake off excess water.
Step 3: Infuse With Pickle Flavor
Transfer the cooled pasta to a large mixing bowl. Pour 1/3 cup pickle juice over the pasta and toss well. Let it absorb the flavor while you prepare the remaining ingredients.
Step 4: Prep the Mix-Ins
Chop the dill pickles into bite-sized pieces. Cube the Colby Jack cheese into small chunks. Finely mince the onion so it blends evenly throughout the salad.
Step 5: Combine the Base
Drain any excess pickle juice from the pasta. Add the chopped pickles, cheese cubes, and onion to the bowl. Toss gently to distribute everything evenly.
Step 6: Make the Dressing
In a separate bowl, whisk together mayonnaise, sour cream, pickle juice, dill, salt, and pepper until smooth and creamy.
Step 7: Mix Everything Together
Pour the dressing over the pasta mixture. Stir thoroughly until every piece is coated.
Step 8: Chill (Recommended)
You can serve immediately, but for best flavor, cover and refrigerate for 1–2 hours. This allows the flavors to blend beautifully.
