Step 1: Warm the Liquid Ingredients
Start by lightly coating a 9×13-inch baking dish with cooking spray so the rolls won’t stick later. In a microwave-safe bowl or small saucepan, combine the water and melted butter. Stir in the milk and honey until everything blends smoothly. Warm the mixture until it reaches about 105–110°F. The liquid should feel comfortably warm, not hot. If using a microwave, heat in short bursts of about 15 seconds, stirring each time. A stovetop works just as well if you heat it gently over low heat.
Step 2: Wake Up the Yeast
Pour the warm liquid into a stand mixer bowl. Sprinkle the active dry yeast over the top and stir lightly with a fork. Let the mixture rest for about 5 minutes. You should see small bubbles and foam forming on the surface—this means the yeast is active and ready to work.
Tip: No bubbles? The yeast might be expired or the liquid may have been too hot.
Step 3: Form the Dough
Add 3½ cups of flour along with the sea salt to the yeast mixture. Attach the dough hook and mix on low speed until everything starts coming together. If the dough sticks heavily to the bowl, sprinkle in more flour gradually until it becomes soft and slightly tacky. Knead with the mixer for about 4–5 minutes until the dough looks smooth and elastic. Shape the dough into a ball and transfer it into a well-greased bowl.
Pro tip: A greased bowl prevents sticking and makes cleanup easier later.
Step 4: First Rise
Cover the bowl with a damp towel or paper towel. Let the dough sit in a warm spot for about 15 minutes. This short rise helps create rolls that bake up light and airy.
Step 5: Shape the Rolls
Press the dough gently to release trapped air. Divide it into 15 equal pieces and roll each portion into a smooth ball. Place the dough balls evenly in the prepared baking dish. Cover again with a damp towel and allow them to rise for 15–20 minutes until slightly puffed. Keeping the towel lightly moist helps prevent the dough from drying out.
Step 6: Bake
Preheat your oven to 400°F (200°C). Remove the towel and bake the rolls for about 15 minutes, or until the tops turn lightly golden. If they start browning too quickly, loosely cover them with foil during the final minutes of baking.
Step 7: Brush with Butter
Transfer the pan to a cooling rack. While the rolls are still hot, brush the tops generously with melted butter. This simple step keeps the crust soft and adds extra flavor. Serve warm and enjoy every fluffy bite.
