1. Prep the sprinkles first.
Pour the pastel sanding sugar onto shallow plates so they’re ready to go. Spread a thick, round layer of white frosting on the top of each cookie using a butter knife or offset spatula.
2. Add the sparkle.
Flip the frosted side of each cookie face-down into the sprinkles and gently press. This part is perfect for little helpers! Set the cookies frosting-side up on parchment paper, baking sheets, or paper towels.
3. Make a quick frosting bag.
Spoon pink frosting into one corner of a zip-top bag. Snip off the very tip with clean kitchen scissors to create a simple piping bag.
4. Create the bunny feet.
Cut the regular marshmallows in half. Each half will become a pair of bunny paws.
5. Decorate the paws.
Pipe pink frosting onto the rounded side of each marshmallow half to draw little toe details. Add a small dab of frosting to the sticky side, then attach the paws to the lower edge of each cookie.
6. Finish with the tail.
Dab a bit of pink frosting onto the bottom of a mini marshmallow and press it into the center of the cookie to form the bunny tail. The frosting works like edible glue to keep everything in place.
