1. Get Your Oven Ready
Set your oven to 350°F (175°C). Line two baking trays with parchment paper so nothing sticks later.
2. Combine Dry Ingredients
In a bowl, whisk together flour, baking powder, baking soda, and salt. Keep this mixture aside.
3. Cream Butter & Sugar
In a separate large bowl, beat the butter and sugar until the mixture looks pale and fluffy. This takes about 2–3 minutes—don’t rush it.
4. Add Eggs & Flavor
Crack in the eggs one at a time, mixing well after each addition. Stir in vanilla and lemon zest for that fresh citrus aroma.
5. Bring Everything Together
Add the dry ingredients gradually, alternating with milk. Start with dry, end with dry. Mix just until a soft dough forms—don’t overdo it.
6. Shape the Cookies
Scoop about a tablespoon of dough, roll into small balls, and place them on your baking trays. Leave space between each cookie.
7. Bake to Perfection
Bake for 10–12 minutes. The bottoms should turn lightly golden while the tops stay pale and soft.
8. Cool Down
Let cookies rest on the tray for 5 minutes, then transfer to a wire rack to cool completely.
