Step 1: Prep the Oven & Pan
Set your oven to 350°F (175°C). Grease and lightly flour a bundt pan or two loaf pans so the cake releases cleanly after baking.
Step 2: Build the Creamy Base
In a large mixing bowl, beat together sugar, butter, and shortening until the mixture turns pale, fluffy, and airy. Add eggs one by one, mixing well after each addition so everything stays smooth and stable. Pour in heavy cream, Key lime juice, lime zest, and vanilla. Mix until the batter looks silky and fragrant.
Step 3: Combine Dry Ingredients
In a separate bowl, whisk together cake flour, baking powder, and salt. Slowly fold the dry mix into the wet mixture. Stir gently—don’t overmix or the cake can lose its soft texture.
Step 4: Bake to Perfection
Pour batter evenly into your prepared pan(s). Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Let it rest in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Whisk powdered sugar, Key lime juice, and vanilla extract until smooth and glossy.
Step 6: Finish & Glaze
Once the cake is fully cooled, drizzle glaze generously over the top. Let it set so it forms that sweet citrus crust.
