1. Get the Oven Ready
Set your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving some overhang so you can lift the bars out easily later. (Trust me, this saves you from a sticky situation.)
2. Combine the Dry Ingredients
In a bowl, whisk together the flour, sugar, salt, and baking powder until evenly mixed.
3. Mix Butter, Eggs & Lemon Flavor
In a separate large bowl, beat the softened butter until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest and juice—this is where the magic starts.
4. Bring It All Together
Slowly add the dry mixture into the wet ingredients. Mix gently until just combined. Don’t overdo it—overmixing = dense, tough bars (and nobody wants that).
5. Bake to Perfection
Spread the batter evenly into your prepared pan. Bake for 22–25 minutes, or until the edges look lightly golden and the center is set. A toothpick should come out with a few moist crumbs.
6. Make the Lemon Glaze
While the bars cool, whisk powdered sugar with lemon juice until smooth. You’re aiming for a thick but pourable glaze.
7. Glaze & Finish
Once fully cooled, pour the glaze over the top and spread evenly. Sprinkle extra zest if you want that bakery-style glow-up.
8. Slice & Serve
Lift the bars out using the parchment paper, slice into squares, and try not to eat three in a row… or do. No judgment.
