Step 1: Build the Sauce
In the bowl of your slow cooker, whisk together the heavy cream and chicken broth until smooth. Stir in the sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper. This creamy base is where all the flavor starts.
Step 2: Add the Chicken
Nestle the chicken breasts directly into the sauce. Turn them once or twice so they’re fully coated—this helps keep them juicy while they cook.
Step 3: Slow Cook
Cover the slow cooker and cook:
On LOW: 6–7 hours
On HIGH: 3–4 hours
The chicken should be tender and easy to pull apart with a fork.
Step 4: Finish with Greens & Cheese
About 30 minutes before serving, gently stir in the spinach and Parmesan cheese. Replace the lid and let everything melt together into a creamy, velvety sauce.
Step 5: Serve
Taste and adjust seasoning if needed. Spoon over pasta, rice, or mashed potatoes, and finish with fresh basil for a pop of color and freshness.
