1. Mix the Filling
In a bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Stir until creamy and fully blended. Fold in chopped jalapeños and bacon crumbles. The mixture should be thick, smooth, and packed with flavor.
2. Roll Them Up
Place an egg roll wrapper on a flat surface like a diamond shape. Spoon about one tablespoon of filling into the center. Fold the bottom corner over the filling, tuck in both sides, and roll tightly. Seal the edge with a little water. Repeat until all filling is used.
3. Heat the Oil
Pour 1–2 inches of oil into a deep skillet and heat to 350°F (175°C). Test by dropping in a small piece of wrapper—if it sizzles immediately, you’re ready.
4. Fry to Golden Perfection
Cook egg rolls in batches to avoid overcrowding. Fry 2–3 minutes per side until evenly golden and crisp. Transfer to paper towels to drain excess oil.
5. Serve
Let cool slightly, then serve warm with ranch, salsa, or your favorite dip.
