1️⃣ Mix the coating first
Grab a large zip-top bag and add the powdered sugar and pistachio pudding mix. Seal it tight and shake until the colors blend evenly. Drizzle in the almond extract, reseal, and shake again so the flavor spreads throughout the mix. Set aside.
2️⃣ Melt the chocolate base
Add the white chocolate wafers and butter to a microwave-safe bowl. Heat for 30 seconds, then stir well. Continue heating in short 15-second bursts, stirring each time, until the mixture turns smooth and glossy—no lumps, no scorch marks. Pour the melted chocolate over the Rice Chex in a large bowl. Stir gently but quickly, making sure every piece gets coated before the chocolate begins to set.
3️⃣ Shake and coat
Transfer the chocolate-covered cereal into the prepared zip-top bag. Seal it and shake like you mean it until every piece is dusted in that sweet pistachio coating. Spread the mix out to cool before serving.
