1. Cook and Cool the Pasta
Boil the rotini according to package directions until just tender (not mushy). Drain and rinse under cold water right away to stop the cooking process. Let it cool completely.
2. Create the Red & Blue Pasta
Grab two zip-top bags. Add red coloring + 1 tablespoon water to one bag, and blue coloring + 1 tablespoon water to the other. Divide the pasta into three equal parts. Add one portion to each bag (red + blue), leaving the third portion plain. Seal and gently massage until the pasta is evenly colored. Add more color if needed.
3. Keep the White Pasta Clean
Place the plain pasta into a bowl and toss it lightly with oil. This step helps prevent the colors from bleeding together later.
4. Mix Everything Together
In a large bowl, combine all three pasta colors. Add tomatoes, mozzarella, pepperoni, and olives. Pour in the dressing and toss gently until everything is coated.
5. Chill Before Serving
Cover and refrigerate for at least 1 hour. This step is key—it allows flavors to blend and makes the salad extra refreshing.
