1. Prepare the Oven
Set your oven to 375°F (190°C) so it’s fully heated and ready to go.
2. Make the Filling
In a medium bowl, combine chopped spinach, feta, cream cheese, minced garlic, oregano, salt, and pepper. Stir until the mixture looks creamy and evenly blended.
3. Create the Chicken Pockets
Using a sharp knife, carefully slice a deep pocket into the side of each chicken breast. Be careful not to cut all the way through. Spoon the spinach and cheese mixture into each pocket, dividing it evenly. Secure with toothpicks if needed.
4. Sear for Flavor
Warm olive oil in a large skillet over medium-high heat. Place the stuffed chicken breasts in the pan and cook for about 3–4 minutes per side, until nicely browned.
5. Finish in the Oven
Transfer the chicken to a baking dish. Bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
6. Rest and Serve
Let the chicken sit for 5 minutes before slicing. This helps keep the juices inside where they belong.
