Step 1: Prep Your Baking Dish
Preheat your oven to 375°F (190°C). Line a 9×13-inch pan with parchment paper or lightly grease it to prevent sticking.
Step 2: Make the Crumb Mixture
In a large mixing bowl, combine flour, sugar, baking powder, and salt. Add the cold butter pieces and work them into the dry ingredients using a pastry cutter or your fingertips until the texture resembles coarse crumbs.
Step 3: Add the Egg
Pour in the beaten egg and gently mix until the dough becomes crumbly but holds together when pressed.
Step 4: Form the Base
Take about half of the dough and press it firmly into the bottom of your prepared pan. Make sure it’s even—this forms the sturdy base.
Step 5: Prepare the Strawberry Layer
In another bowl, toss the chopped strawberries with sugar and cornstarch until evenly coated. This helps create that thick, jam-like filling as it bakes.
Step 6: Assemble the Bars
Spread the strawberry mixture evenly over the crust. Then sprinkle the remaining crumb mixture over the top, covering as much as possible.
Step 7: Bake to Golden Perfection
Place the pan in the oven and bake for 45–50 minutes, or until the top turns lightly golden and the filling bubbles slightly.
Step 8: Cool Before Slicing
Allow the bars to cool completely in the pan before cutting.
