1. Prepare Your Baking Pan
Preheat your oven to 350°F (175°C). Line a 9-inch square baking pan with parchment paper, leaving extra overhang on the sides for easy removal later.
2. Cream Butter & Sugar
In a mixing bowl, beat the softened butter and sugar until light and fluffy. This step builds the base texture—don’t rush it.
3. Add Egg & Lemon Juice
Mix in the egg until fully combined. Then pour in the fresh lemon juice. Don’t worry if the mixture looks slightly curdled—that’s completely normal.
4. Combine Dry Ingredients
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add this to the wet mixture and stir until just combined. Avoid overmixing.
5. Fold in Strawberries
Gently stir in the diced strawberries. The batter will be thick—this is exactly what you want.
6. Spread & Bake
Transfer the batter into your prepared pan and spread evenly using a spatula. Bake for 30–35 minutes, until the edges turn lightly golden and the center is set. A toothpick should come out moist, not wet.
7. Cool Completely
