Step 1: Make the Crust
Crush the Golden Oreos into fine crumbs. Stir in sprinkles for that festive pop of color. Pour in melted butter and mix until the crumbs are evenly coated. Press firmly into a 9×13-inch dish to create a solid base. Chill in the fridge until set.
Step 2: Prepare the Blueberry Cheesecake Layer
Dissolve the blue gelatin in hot water, stirring until fully smooth. Let it cool slightly. Blend blueberries with Greek yogurt until smooth, then mix into the cooled gelatin. In a separate bowl, beat cream cheese, powdered sugar, and vanilla until silky. Fold in whipped cream, then gently combine with the blueberry mixture. Spread evenly over the chilled crust and refrigerate until firm.
Step 3: Add the Strawberry Layer
Whisk strawberry gelatin with hot water until dissolved, then stir in cold water. Let it cool to room temp. Layer sliced strawberries over the set blueberry layer. Slowly pour the gelatin over the top. Refrigerate for at least 4 hours, or overnight for best results.
Step 4: Finish & Decorate
Spread whipped cream over the top layer once fully set. Add sprinkles or fresh berries for a festive finish. Slice and serve chilled.
