Step 1: Prepare the Oven and Baking Dish
Set your oven to 350°F (175°C) so it can heat up while you assemble the casserole. Lightly coat a 9×13-inch baking dish with nonstick cooking spray or a thin layer of oil to prevent sticking.
Step 2: Cook the Sausage
Place the sausage in a large skillet over medium heat. Break it apart with a spatula as it cooks. Continue cooking until the meat turns fully browned and no pink remains. Drain off the extra grease and set the sausage aside.
Step 3: Combine the Main Ingredients
In a large mixing bowl, add the frozen tater tots, cooked sausage, shredded cheddar cheese, and mozzarella. Stir everything together so the ingredients are evenly mixed.
Step 4: Assemble the Casserole
Transfer the mixture into the prepared baking dish and spread it out evenly across the bottom.
Step 5: Mix the Egg Custard
In a separate bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until smooth and fully combined.
Step 6: Pour and Soak
Slowly pour the egg mixture over the tater tot mixture, making sure it spreads evenly across the dish so every bite gets flavor.
Step 7: Bake the Casserole
Place the dish in the oven uncovered and bake for 60–70 minutes, or until the eggs are firm and the top looks golden and slightly crisp.
Step 8: Cool and Serve
Allow the casserole to rest for about 5–10 minutes before slicing. This helps it set and makes serving much easier.
