Heat the oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it thoroughly to prevent sticking.
In a large mixing bowl, beat the eggs until smooth. Stir in the Greek yogurt and melted butter (or coconut oil). Whisk until fully combined and creamy.
Add baking powder, salt, and xanthan gum (or psyllium). If using almond flour, fold it in at this stage. Mix until the batter thickens slightly and looks uniform.
Pour the mixture into your prepared loaf pan. Smooth the surface evenly with a spatula.
Place in the oven and bake for 35–45 minutes. The top should turn lightly golden, and a toothpick inserted into the center should come out clean.
Let the bread rest in the pan for about 10 minutes. Then move it to a wire rack and allow it to cool completely before slicing.
